How to Master Burritos and What to Drink With

Last week we worked with Chef Nicole and prepared a Mexican dish: burritos with chicken, and homemade lime guacamole. We have been inspired by a recipe on Giallo Zafferano and adapted it to our taste.

We started up with the guacamole, opening a ripe avocado and squashing it in a bowl where we also squeezed some lime and added salt and pepper. Then we cut some shallot, green chili and tomatoes (small cubes) and melt everything together with a fork.


Immediately after we started with the preparation of the chicken: we cut the chicken in small strips, added some olive oil, some honey, powdered chili, and finally both some lime and grated rinds of 1 lime.

Once it was ready, we covered the bowl with transparent film and let it marinate for 30 minutes in the fridge (longer if out of the fridge) before pouring it in a pan together with al the marinated sauce. Cook it for 5-6 minutes until it starts to be crispy:

While the chicken cooks, start the cutting of tomatoes, lettuce and cheese (we chose asiago since we didn’t have cheddar):

We started to warm the tortillas on a pan and put some cheese on it to make it melt before adding all the other ingredients:

Finally, we closed the burrito and added the homemade lime guacamole on top:

We considered a few different options for what to drink with the burritos and we ended up choosing beer because all the wines we had at home were either too structured or too light for this dish (poor planning, we know…). The best option seemed to be a bottle of La Chouffe, popular Belgian beer produced by Brasserie D’Achouffe. It pairs fairly well with chicken and seemed to be the most balanced choice with this dish.

  • 4 tortillas
  • 400g of chicken
  • 80g of lettuce
  • 150g of cooked black beans
  • 350g of tomatoes (150g for the guacamole and 200g for the burritos)
  • 200g sliced cheddar
  • olive oil, salt, and pepper
  • 20g of honey
  • 1 lime
  • 1 green chili
  • 1 ripe avocado
  • 10g of shallot
